Sometimes side dishes can be a little boring and somewhat of an afterthought, especially rice. Not this one!, this is definitely not the case for this rice!

My take on spicy rice has an array of gorgeous herbs & spices, nutritious vegetables, a little kick of heat from the chilli ( optional ) and is thee perfect accompaniment for any meal. It can be made into a wholesome meal in it’s own right by adding some chicken, steak, fish or beans/legumes or as a tasty side on it’s own.

You can totally adapt this rice to suit your family and your taste buds and it also uses up any vegetables that have seen better days that you have in the back of the fridge, or, if vegetables aren’t your thing then leave them out altogether, it’s completely up to you!! Top tip – If you have little ones that won’t eat vegetables ( or big ones) you can chop them really small of better still blitz them and add to the stock, they will barely notice they are there.

Equipment

  • 1 Deep frying pan with lid

Ingredients
  

  • 2 cups Basmati Rice
  • 6 cups Boiling water
  • 1 Stock cube
  • 2 tbsp Olive Oil
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 1 Large Onion
  • 1 Large Carrot
  • 1 Stick of celery
  • 2 tbsp All Purpose Seasoning
  • 1 tbsp Chilli powder or chilli flakes
  • 1 tbsp Turmeric
  • 1 tbsp Smoked or Sweet Paprika
  • Salt & Pepper to Taste

Instructions
 

  • Chop all your veggies and fry on hob on a medium heat until slightly soft using the olive oil
  • Add the spices, all purpose seasoning, chilli, turmeric, paprika, salt & pepper and coat the veggies
  • Add the 2 cups of rice and the 6 cups of boiling water with stock cube dissolved in it and stir
  • Cover with lid, turn heat right down on hob and set a 20 minute timer
  • When the time is up the rice should be cooked through and it will have hopefully just caught on the bottom giving you the best crispy bits!
