Simple Chicken Sausage Spaghetti

One of the things I am asked a lot as a coach and as a cook is ” How can i cook healthy meals when on a budget”. The truth is it does take some imagination but it can definitely be done. This simple chicken spaghetti hits the spot! The great thing for you is that I am here to help and I have done all the hard work for you.

There are a tonne of healthy meals and recipes I have created that fall into this category. I’ll be sharing them with you over the coming weeks and months.

This recipe used up some chicken sausages I had in the freezer from a good old Asda yellow sticker. I got 20 sausages for less than £4, bargain!

Paired up with some spaghetti it made a simple yet really tasty meal the whole family enjoyed.

I used my special tomato sauce made up of chopped tomatoes, garlic, onion, sweet peppers, courgettes, and carrots. This is a great way to get more vegetables into your meals.

So Why Chicken Sausages ? – They are higher in protein, lower in saturated fat, lower in calories and really versatile. They are readily available now in all the supermarkets and really good on price too

This whole meal makes 8 portions and comes in at around 70p per portion. It can be made in even bigger batches and tastes amazing the day after. So it’s a great one to pop in the freezer for a quick meal anytime

Equipment

  • 1 Large Frying Pan
  • 1 Saucepan

Ingredients
  

  • 2 packs Chicken Sausages
  • 500 g Spaghetti
  • 1 Red Onion
  • 2 cloves Garlic
  • 2 tins Chopped Tomatoes
  • 1 tsp Sugar
  • Salt & Pepper
  • 1 tbsp Oil
  • Chilli and Herbs to garnish ( optional )

Instructions
 

  • Remove the skin from the sausages and chop into small pieces
  • Heat your frying pan on a medium heat, add the oil and the sausages and cook until browned
  • Add the chopped onion and garlic and fry until onions are soft.
  • Put your spaghetti into a large saucepan of salted water and cook for 10-12 minutes
  • Add the tins of tomatoes to the frying pan and cook for a further 10 minutes until tomatoes have cooked down a little and the sauce has thickened.
  • Once the spaghetti is almost cooked add it to the tomato and sausage mix to finish cooking, this way the spaghetti will absorb some of the sauce and it adds to the flavour
  • After a few more minutes you can serve and enjoy
