This garlic, soy and chilli chicken recipe came from a place of being sick of eating similar kinds of things, loving chicken and my favourite takeaway being chinese.

So it made sense to get my own creative juices flowing and come up with something simple and not using to many ingredients, many of which I already had.

It uses just 6 main ingredients and takes less time than it would to order and wait for a delivery from your local which I love

I’ll be doing a blog soon on my essential ‘must have’ cupboard essentials. I use a handful of things almost every day so having your own spices and seasonings makes sense! Keep an eye out for that one

Garlic, Soy and Chilli Chicken

A slightly healthier way to make one of your favourite takeaway meals, saving you time, money and calories!

Equipment

  • 1 Good non-stick frying pan

Ingredients
  

  • 400 g Chicken Breast
  • 2 tbsp Cornflour
  • 2 tbsp Olive Oil
  • 2 tbsp Chilli ( can add more if you like it hot!)
  • 4 cloves Garlic
  • 2 tbsp Soy Sauce
  • 2 tbsp Honey
  • 1 Red Pepper
  • 2 Spring Onions

Instructions
 

  • Start with slicing the chicken into strips, keep them small so they cook quick and set aside in a bowl
  • Add the cornflour to the chicken and season with salt and pepper and leave for a couple of minutes
  • Chop your red pepper and spring onion and set aside in a different bowl for later – prep is key with any meal but especially these kinds of recipes
  • Add the chilli, garlic ( crushed or chopped ), soy sauce and honey to a jug and mix well. leave this to one side for now too
  • Add the oil to your pan and gently fry the chicken pieces on a medium heat for around 10 minutes, turning half way through.
  • Once chicken is cooked take out of the pan and set aside
  • Add your red pepper and spring onion to the same pan and lightly fry for a couple of minutes ( you want these to still be a little crunchy so don't overdo this part)
  • Once this has been done add your chilli, garlic, soy and honey mixture to the pan to reduce and thicken a little. The residual corn flour will thicken it nicely
  • Once it's thickened add your chicken back to the pan and stir round until it's all coated, then it's done.Enjoy!
