Friday night fakeaway – NOODLES!

We all love a takeaway but we don’t like the cost and often high calories quite so much right?!

This fakeaway recipe is incredible, quick to make and has lean protein and plenty of veggies.

Many of us are now more health conscious which is great but that doesn’t mean we don’t want to enjoy our favourite meals with the family.

I remember when I was a child, any kind of takeaway was a real treat and now it can be an ‘any day of the week’ meal.

Chinese food is one of my personal favourites. It brings really great flavour, crunchy veggies and pretty quick recipes. The key is in the preparation with Asian cuisine, once you are ready to go it’s simple and quick.

There are only 5 ingredients plus whatever vegetables you want to add. I used Red Pepper, Red Onion, Spring Onions and some fresh garlic but you could use whatever you like or whatever you have leftover at home.

The recipe also has all the macronutrients you need for a balanced meal and tastes amazing!

For me, any meal that the kids can get involved in and doesn’t take me long to make is a winner so let’s get started!

Equipment

  • 1 Large Frying Pan
  • 1 Saucepan

Ingredients
  

  • 500 g Chicken Breast or Chicken Thigh
  • 4 portions Dried Egg Noodles
  • 2 tbsp All Purpose Seasoning
  • 2 tbsp Sweet Chilli Sauce
  • 2 tbsp Soy Sauce
  • 1 tbsp Cooking Oil
  • 1 Red Pepper
  • 2 small Red Onions
  • 2 cloves Garlic
  • 3 Spring Onions for garnish

Instructions
 

  • Start by chopping all the vegetables and set aside so they're ready to go
  • Then cut the Chicken into really small pieces ( this will make the cooking time quicker )
  • Coat the chicken in the All Purpose Seasoning
  • Add the oil into the large frying pan and fry the chicken on a medium heat ⅚until brown and cooked through – takes about 10 minutes
  • Once the chicken is cooked, add the vegetables to the pan and cook for a further few minutes – these should still be crunchy
  • While these are cooking add your noodles to a saucepan of salted water for 3-4 minutes until almost cooked
  • Add your sweet chilli sauce and soy sauce to the chicken and vegetables ,then transfer the almost cooked noodles to the frying pan and incorporate all together
  • Cook this for a further few minutes so the noodles take on the flavours
  • Sprinkle your sliced spring onions over the noodles and it's now ready to enjoy

Notes

SWAPS
  • It doesn’t matter if you use breast or thigh for this, you could even use prawns or tofu instead of the chicken if you prefer , it would be just as good.
  • You could also use rice noodles or spaghetti instead of the egg noodles.
  • You can use whatever vegetables you want to, this recipe is a great opportunity to use up what’s left in the fridge before you go shopping!
  • You could add some fresh chilli or chilli flakes if you like it spicier.
